Behind The Scenes At Sydney Fish Market

The guided tour moved through the market’s hospitality areas and busy back-of-house spaces, offering an insight into the practical considerations behind one of Sydney’s most significant new destinations. Across these areas, material choices need to support high levels of activity while remaining easy to maintain and appropriate for demanding commercial environments.
One example is the approximately 2,000 sqm of Altro walling installed throughout the project. In areas where surfaces are exposed to frequent use, moisture and rigorous cleaning requirements, wall finishes become an important part of the broader operational strategy.


The project demonstrates how these considerations can be incorporated without treating performance as separate from the architectural experience. Materials selected for their durability and hygiene requirements become part of the infrastructure that allows hospitality spaces to function at scale.
For the visiting group, seeing these decisions in context offered a different way to understand the project. Rather than experiencing the Sydney Fish Market solely as a public destination, the tour revealed some of the spaces and systems working behind the scenes to support its daily operation.

The experience also provided an opportunity to discuss the relationship between design, specification and long-term performance with peers across the architecture, design and hospitality industries. A hands-on oyster-shucking demonstration and shared meal brought the visit back to the market’s central purpose: food, hospitality and bringing people together.
